beetsalad

We have been enjoying some beautiful days here in Nashville. When the sun is warm (not oppressively hot as is its custom this time of year) and the breeze is cool, my food cravings reflect that delight. I submit to you this cheerful, bright salad that you can make almost instantly and get back outside!

For One Salad:
Greens (I used Organic Girl Super Greens)
1/4 Candy Cane Beet (regular beets work just as well)
Handful of Blueberries
2-3 oz Goat Cheese
Salt and Pepper

For the Dressing:
Juice of 1 Large Lemon or 2 Small Lemons
1/3 Cup Olive Oil (If you have multiple kinds, use your highest quality)
1/4 Teaspoon Salt (more or less taste)
Dash Fresh-Ground Pepper

If you are feeling brave and earthy, slice the beets thin (as shown in picture). If the taste is a bit too bold for you, toss the sliced beets in a teaspoon or so of olive oil and soften in a pan on the stove. Just make sure to let the softened beets cool before adding to your salad. Build your salad as you wish, careful assembly not required! The dressing just needs a quick whisk. Dress as liberally as you wish.

Nothing goes better with that sun-kissed skin than a healthy body and a happy tummy. I hope you enjoy this sunshiny salad as much as I did!
